Peruvian Recipe: Lomo Saltado

Lomo Saltado

For 6 people

1 Pound of Beef tenderloin
2 large onions 
3 white potatoes
3 tomatoes
1 fresh pepper
3T vinegar
1t. Ground garlic
Cumin
Oregano
Salt and pepper

Cut up the meat into small pieces, fry in oil. Remove from frying pan. 
Cut potatoes into the shape of french fries and cook in the same oil. 
Take out potatoes and add salt, pepper, cumin, garlic and oregono to the oil. 
Add the cooked meat and cover with sliced onions and sliced pepper. 
Stir and add vinegar, cover and let cook on low heat. 
When the meat is tender, add the fried potatoes and tomato wedges. 
Stir slowly to warm up the potatoes and to mix the tomatoes. 
Served with rice.

This is a tasty dish that is served often in Peru.  I have had it several times while I have been here and I will be making it when I get home.  If you try it let me know how it turns out.
